So Friday night is pizza night at our house most of the time. It started out as Little Caesar night because my 10-yr-old was convinced it was the best pizza on the planet, but when we moved into Charlotte, there was not one convenient to us (can’t say I am sorry about that). We then started making them at home…but we quickly got tired of the same generic pepperoni pizza every week.
We found a local California style place with a cool vibe that we liked a lot (Wolfman Pizza. In case you were wondering), and it really inspired us to branch out with our pizza toppings. We still had to make a small pepperoni for the little guy, but the rest of us could try more adventurous fare. I found some pretty amazing recipes on Pinterest, a whole board in fact 😉
Now we haven’t tried all of them yet, but we have worked our way through a big chunk of them. These seven are our absolute favorites…so far. I’m sure I will have to do a follow-up post later.

Fantastic Pizza #1: Three Cheese Pesto Spinach Flat Bread Pizza
Pesto is amazing. I used to be a little wary about eating it because it is just so, well, green, but I have learned to look past the greenness and enjoy the heck out of it. We have made this one a few times, once on pita because the store was out of Naan, and it was still pretty darn tasty.
Fantastic Pizza #2: Carne Asada Pizza
No one in my house really likes red, yellow, or white onions. Most recipes we just switch them out for green…pretty sure we did that here or just left them off all together. Did that alter the taste…don’t really know, but it was fanfrickintastic regardless.
Fantastic Pizza #3: Indian Cauliflower Pizza
The first time we made this, we went a little heavy on the mango chutney and it overpowered the other flavors. Second time, we got the ratio right and ooooh boy. It seems so odd when you are making it but trust me on this one, okay?
Fantastic Pizza #4: Moroccan Roasted Garlic Pesto and Cashew Pizza
Here we go with the pesto again 🙂 This time it is paired with an abundance of vegetables and an exotic mix of spices. I am big on consistencies and textures, and the cashews on top give it the perfect amount of crunch. Honesty time: We did not make the homemade dough. We bought some at Trader Joes.
Fantastic Pizza #5: Bacon Basil Pesto Chicken Pizza
Yeah…so maybe we have a pesto problem, but come on: bacon, chicken, pesto, kind of speaks for itself. We cheated on this one too and bought the dough…oh who am I kidding, we ALWAYS buy the dough. We did make the pesto according to the directions, that’s gotta be worth something, right?
Fantastic Pizza #6: Homemade Roasted Vegetable Pizza
This one does take a rather long time due to roasting the vegetables. So worth it. In an effort to get it on the table a little faster, we roasted the veggies the night before which cuts down the prep/cook time a lot. I would say the type of vegetables you use is pretty flexible. Oh and an aubergine is an eggplant. Maybe you would have already known that, but I did not and had to google it 🙂
Fantastic Pizza #7: BBQ Chicken Flatbread
We most likely switched the onions on this one as well, and I am not sure what two BBQ sauces we used. I would say one was Sweet Baby Ray’s because we nearly always have that in the cabinet, but the other one may have been a homemade BBQ sauce with pineapple juice we make on occasion??? Whatever it was, it was delectable!
