Rob’s homemade veggie soup (or we have too many bags of frozen vegetables in our freezer soup)

Our freezer is stuffed full to the brim.


I tried to clean out/organize it last week, and even though I threw out a bunch of disgusting freezer burnt things (some of them unrecognizable), we still had waaaaay too many bags of frozen vegetables, many of them multiples. I found four unopened bags of frozen corn. I wish I was kidding.

So in an effort to use up a little bit of those goodies, Rob made a delicious batch of vegetable soup.  There really isn’t a recipe, just grab whatever is in your freezer and toss it in the pot, but, for what it’s worth,  here is what went into our pot. Enjoy!

Rob’s Homemade Veggie Soup

⦁ 1/2 bag frozen corn
⦁ 1/2 bag frozen peas
⦁ 1/4 bag frozen okra
⦁ 1/2 bag frozen bell pepper slices
⦁ 1/2 white onion (diced)
⦁ 1 can diced tomatoes
⦁ 1 can chickpeas
⦁ 1 box Trader Joe’s Veggie Broth
⦁ 1 tbl Garlic Powder
⦁ 1 tbl Onion Powder
⦁ Salt and Pepper to taste

Toss it all in a big pot, bring it to a boil, then let simmer 25-30 minutes (or longer if desired).

    1. I am using wordpress! I do not have any coding knowledge…but wordpress makes it fairly simple. I also found a lot of tutorials on youtube or pinterest. Thanks for stopping in!
