So, we all know that I am not very adept in the kitchen, but I am very good at eating and definitely know a good recipe when I taste one. I mean, you would probably have to try to make chocolate chip cookies taste bad…but my mom’s recipe is way better than your average cookie—in fact, I would say it is the best chocolate chip cookie recipe!
Lucky for all of you, I am going to share it here today.
In general, my mother is an excellent cook (this apple fell very far away from that tree), but she is an outstanding baker. Seriously, my husband had to beg her to quit dropping off baked goods because he couldn’t stop stuffing himself! The one exception to that plea was these cookies.
My whole family is perfectly content to let her drop them off any time she likes (which honestly isn’t often enough, hence me making them myself!)
She says the secret to making the cookies so delicious is NOT to melt the butter. You have to set it out and wait until it is room temperature. I’m not sure why that matters, but apparently, it is the most important step.
Don’t let that cup of coconut throw you off either. They don’t have an overpowering coconut flavor, just a little something to make you say “Yum, What is that little extra?”
Listen, I made these cookies all by myself, and they are pretty dang tasty. I’m not gonna say that they are as good as my mom’s…but I bet if you mixed hers and mine in a box, you wouldn’t know the difference. 😉

Sounds delicious–I wonder if I could use gluten-free flour for this?
